Ingredients

  • 600 ml thick natural yoghurt
  • 3 tbsp icing sugar
  • 2 tbsp chia seeds
  • 1 tsp dragon fruit matcha + 70 ml hot water
  • 1 tbsp gelatine + 150 ml hot water
  • 1 pack of Mamutki (20 g)
  • dragon fruit (pitaya) flesh
  • freeze-dried red fruits or dried flower petals, for decoration

Preparation

  1. Mix the yoghurt with the icing sugar and divide it into two portions. Add the chia seeds to one portion and set aside for about 30 minutes, until the seeds swell.
  2. Dissolve the gelatine in hot water, allow it to cool, then mix it into the yoghurt. Dissolve the matcha in hot water and add it to the yoghurt mixture. Refrigerate for about 15 minutes, until the mixture begins to set.
  3. Sprinkle Mamutki over the bottom of serving glasses. Add a layer of the matcha mixture and leave to set. Add a layer of the yoghurt mixture, followed by another layer of the matcha mixture.
  4. Refrigerate until completely set. Decorate as desired, for example with dragon fruit flesh and Mamutki.
